’Nduja Pasta
A rich pasta dish perfect for busy nights.

Ingredients:
400 g (14 oz) pici (or other pasta of your choice)
For the sauce:
1 small red onion, peeled and chopped
200 g (7 oz) nduja, broken into chunks
400 g (14 oz) small cherry tomatoes, cut in half, or canned peeled tomatoes
A few basil leaves, torn into pieces by hand if large
Olive oil
Salt
To finish the dish (optional):
Freshly grated pecorino toscano or romano
Instructions:
Gently sauté the chopped onion in olive oil until soft and translucent.
Add the 'nduja and let it melt. Then add the tomatoes along with the basil and a good pinch of salt. Let simmer gently for 15 minutes or so, until the tomatoes have melted into a sauce, stirring from time to time.
While the sauce is simmering, bring well-salted water to a boil and cook the pasta al dente.
Drain the pasta (but not too well) and add it to the sauce. Mix well, still over very gentle heat.
Serve right away, with cheese for those who want it.
’Nduja & Burrata Pizza
A spicy, creamy, irresistible combination.

Ingredients:
Pizza dough
Tomato sauce
’Nduja (a few teaspoons)
Fresh mozzarella
Burrata
Basil
Instructions:
Spread tomato sauce over the dough.
Add small teaspoons of ’nduja and mozzarella.

’Nduja Roasted Potatoes

Ingredients:
Potatoes
Olive oil
’Nduja
Salt & rosemary
Instructions:
Peel and cut the potatoes into quarters and add to a large saucepan of salted water. Bring to the boil and blanch the potatoes for ten minutes or until slightly tender.
While the potatoes parboil, pour about 100ml (1/2 cup) of olive oil into a large baking tray and place into the oven for 5 minutes to heat up.
Once the potatoes are ready, drain and allow to steam dry for a minute, then pour into the hot roasting tray, season with salt and place into the oven to roast for 45 mins.
Remove the potatoes and add the finely chop rosemary with the Nduja.
Mix well and roast for another 5 minutes until the potatoes are crisps and the Nduja has melted.
Serve with: Any roasted meat or as a crowd-pleasing appetizer.
’Nduja Butter for Steak or Seafood
The easiest way to elevate dinner.

Ingredients:
4 tbsp softened butter
1–2 tsp ’nduja
Parsley or chives
Lemon zest
Instructions:
Mash butter with ’nduja and herbs.
Form into a log or leave in a small bowl.
Place a spoonful on hot steak, grilled shrimp, or roasted fish.
