Nduja is one of the most underrated but versatile Italian ingredients: spreadable, spicy, and packed with flavor! Whether you are cooking a quick weeknight dinner or impressing guests, this Calabrian spreadable salami can elevate any dish with just a spoonful.

’Nduja Pasta

A rich pasta dish perfect for busy nights.

Ingredients:

  • 400 g (14 oz) pici (or other pasta of your choice)

For the sauce:

  • 1 small red onion, peeled and chopped

  • 200 g (7 oz) nduja, broken into chunks

  • 400 g (14 oz) small cherry tomatoes, cut in half, or canned peeled tomatoes

  • A few basil leaves, torn into pieces by hand if large

  • Olive oil

  • Salt

To finish the dish (optional):

  • Freshly grated pecorino toscano or romano

Instructions:

  1. Gently sauté the chopped onion in olive oil until soft and translucent.

  2. Add the 'nduja and let it melt. Then add the tomatoes along with the basil and a good pinch of salt. Let simmer gently for 15 minutes or so, until the tomatoes have melted into a sauce, stirring from time to time.

  3. While the sauce is simmering, bring well-salted water to a boil and cook the pasta al dente.

  4. Drain the pasta (but not too well) and add it to the sauce. Mix well, still over very gentle heat.

Serve right away, with cheese for those who want it.

’Nduja & Burrata Pizza

A spicy, creamy, irresistible combination.

  • ’Nduja (a few teaspoons)

  • Fresh mozzarella

  • Burrata

  • Basil

Instructions:

  1. Spread tomato sauce over the dough.

  2. Add small teaspoons of ’nduja and mozzarella.

  3. Bake until the crust is golden.

  4. Top with burrata and fresh basil.

Pro tip: The heat of the pizza melts the burrata just enough for a perfect creamy finish.

Ricotta & ’Nduja Bruschetta

A beautiful, quick appetizer that makes ’nduja shine.

Ingredients:

  • Baguette or rustic bread

  • Ricotta cheese

  • ’Nduja

  • Honey

  • Olive oil

Instructions:

  1. Toast the bread until crispy.

  2. Spread ricotta generously.

  3. Add a small spoon of ’nduja.

  4. Finish with a drizzle of honey.

Why it’s a fan favorite: The sweet honey balances the spicy ’nduja perfectly. Great addition to your charcuterie or aperitivo!

’Nduja Roasted Potatoes

A simple but flavorful side dish.

Ingredients:

  • Potatoes

  • Olive oil

  • ’Nduja

  • Salt & rosemary

Instructions:

  1. Peel and cut the potatoes into quarters and add to a large saucepan of salted water. Bring to the boil and blanch the potatoes for ten minutes or until slightly tender.

  2. While the potatoes parboil, pour about 100ml (1/2 cup) of olive oil into a large baking tray and place into the oven for 5 minutes to heat up.

  3. Once the potatoes are ready, drain and allow to steam dry for a minute, then pour into the hot roasting tray, season with salt and place into the oven to roast for 45 mins.

  4. Remove the potatoes and add the finely chop rosemary with the Nduja.

  5. Mix well and roast for another 5 minutes until the potatoes are crisps and the Nduja has melted.

Serve with: Any roasted meat or as a crowd-pleasing appetizer.
