Our Story
1925
Lorenzo Nidiaci, Filippo's great-great-grandfather, opens the first salumeria in the heart of Poggibonsi, Tuscany.
He soon becomes well known across central Italy as the personal butcher of the Royal Family.



1935
The Gambassi family, led by Filippo's great-grandfather, begins one of the first major pork trade routes between Tuscany and Northern Italy. This bold step helped laying the foundation for a legacy that would continue to grow for generations.
1940
Filippo's grandfather expands the family business into pig farming across Tuscany. With dedication to the land and respect for the animals, he strengthened the family’s connection to high-quality raw materials.


1950
After World War II, when many families abandoned farming, but the Gambassi family stood firm. They remained among the few in Tuscany to preserve their work as pig farmers.



1978
Giulio Gambassi, Filippo's father, opens the family’s butcher shop in the historic center of Poggibonsi. Here, he began producing artisanal salumi using the treasured family recipes.



1994
Filippo Gambassi joins his father in the family butcher shop. A decade later, in 2004, Filippo and Giulio open a meat production facility in Poggibonsi, where the treasured family recipes are honored and refined.

2013
Filippo earns USDA certification and begins artisanal salumi production in the United States.
Four years later, in 2017, that vision takes full shape as he opens the Terra di Siena production facility in Virginia, becoming the first Italian company in the U.S. to craft skin-on guanciale using Tuscan recipes.
